When the ingredients aren't there...
... improvise!!
Monday night, I got ready to make dinner and realized that I didn't have two of the key ingredients to make the meal I had planned to make. (I was going to make breakfast burritos, but didn't have enough tortillas or any sausage.) I decided to stick with the same idea of the breakfast burritos, just tweaking the recipe a bit.
I substituted Grands! Biscuits for tortillas and used some cooked ham I had in the freezer instead of sausage.
Egg/Ham Breakfast Sandwiches
In a skillet, I heated the ham (1.5-2 cups) with a bit of water (to keep it moist), then added a can of mushrooms (with the water). Once that was warmed through, I scrambled a dozen eggs and mixed it in with the ham and mushrooms. I scrambled the mixture together over medium heat until the eggs were cooked. Then I added about 1/2 cup of cheddar cheese on top, covered the skillet, and turned off the heat.
I served the egg/ham mixture on the biscuits in a sandwich style.
Two biscuits each (for J and me) was VERY filling, and the kids each had one, leaving two for leftovers (which I ate for lunch today).
Revamping this recipe worked for me!
